Each Friday we post a recipe from the L.A. Times Test Kitchen archives that’s perfect for weekend cooking (when you have a little more time on your hands.)

This week, it’s pear bourdaloue. This recipe takes advantage of seasonal pears. But it’s also a chance to exercise some tart-making muscle as we head into the holiday baking season.
