If you find yourself with a batch of ripe peaches, here’s a cool way to use them up. A peach smoothie makes for a healthful, refreshing drink. Try one for breakfast, or whip one up after a day at the pool.
Pick the ripest peaches you can find; they blend the best with the milk and nonfat yogurt. Honey adds a bit of sweetness to the drink, while the lemon juice gives a tangy edge.
Pour the smoothie into a pretty glass, sit back and enjoy.
Peach Smoothie
Active Work and Total Preparation Time: 5 minutes
1 ripe peach
1/2 cup nonfat milk
1/2 cup plain nonfat yogurt
2 tablespoons honey
1/2 cup ice
Fresh lemon juice
Lemon slices, mint sprigs, for garnish, optional
Wash the peach under cold water. Peel the skin from the peach with a small, sharp knife. Cut the peach in half and remove the pit. Cut the peach into large cubes.
Place the peach, milk, yogurt and honey in a blender. Add the ice and puree until the ice is crushed and the drink is smooth and thick. Blend in a squeeze of fresh lemon juice. Garnish with the lemon slices and mint, if desired.
1 serving: 303 calories; 120 mg sodium; 4 mg cholesterol; 0 fat; 0 saturated fat; 70 grams carbohydrates; 9 grams protein; 0.92 gram fiber.
